The Yellow Gold from the Rock Cellar – Natural Dairy Products from the Plangger Cheese Factory
Towering high: In the Plangger cheese factory in Sebi near Niederndorf, wheels of cheese are stacked on top of, below, and beside each other on long shelves. A visit to the store offers a chance to witness this yellow gold in the rock cellar firsthand: a steep staircase leads up to the tasting room, where visitors can get a glimpse into the rock cellar.
The tunnel in the natural rock makes the Plangger cheese factory truly unique. Equally exceptional is the philosophy of the Plangger family, which continues to influence their work in the cheese factory to this day: the handcrafted cheese is a pure natural product, and they place great emphasis on the quality of their raw materials.
For this reason, the Plangger cheese factory works closely with local farmers. After all, healthy soil grows the grass that the cows consume to produce the finest milk. The cows in the region provide hay milk. To bear this designation, strict regulations must be met. Hay milk cows feed on lush grasses and herbs on the pasture during summer, while in winter, they are given dried green fodder.
