A visit to the shop allows you to see the yellow gold in the rock cellar for yourself: a steep staircase leads up to the tasting room, from where you can catch a glimpse into the rock cellar. The well-stocked cheese storage offers a promising sight.

From the Earth to the High-Quality End Product

The tunnel in the natural rock makes Plangger Dairy unique. But equally unique is the philosophy of the Plangger family, which permeates the work in the dairy to this day: The artisanal cheese is a pure natural product, so special emphasis is placed on the quality of the raw materials. One might think that milk is the starting product for cheese production. However, the family's philosophy goes further back, as the actual beginning of cheese lies in the soil.

For this reason, Plangger Dairy works closely with local farmers. Healthy soil grows the grass that cows consume to turn it into the finest milk. The region's cows produce hay milk. To use this designation, strict regulations must be met. Hay milk cows feed on lush grasses and herbs in the pasture during summer, and in winter, they are given dried green fodder.

Natural Products from Plangger

The good nutrients of the milk come from the soil and pass through the cow. The fresh white milk is transported to the dairy to be processed immediately. Cheese production is a natural process and, as such, is subject to certain fluctuations. For example, "summer cheese" differs from "winter cheese." However, it goes without saying that Plangger Dairy's products melt in the mouth all year round and always leave a lasting impression.

Quality has been a tradition at Plangger Dairy for many years. At the same time, the family is always willing to take new paths and work in the interest of their customers. Therefore, the dairy produces hard cheese, semi-hard cheese, and soft cheese in many different varieties: customers like to have a choice when they go shopping. The range at Plangger Dairy is constantly changing; the classics – mountain cheese, cream cheese, dairy cheese, Tilsiter, and many more – are always available, mixed with seasonal specialties and other delicacies:

Whether it's fresh bread from the baker, meat or sausage from the master butcher, or other daily necessities – the shop at Plangger Dairy offers its customers a wide range of products.

Grown and Developed with the Organic Concept

Customers of Plangger Dairy come from near and far to purchase cheese directly from the dairy. The shop is located in Sebi, right next to the in-house rock cellar. The dairy is now run by Martina Brunner, Anita Jäger, and cheese master Reinhard Brunner, keeping it firmly in family hands: Martina and Anita are the daughters, and Reinhard is the grandson of the dairy's founder.

Organic pioneer Herbert Plangger significantly shaped the dairy's philosophy: he recognized early on the connection between soil quality and cheese quality. He was someone who liked to look closely and discovered much in the process: for example, the impact of microorganisms, which are crucial not only for successful cheese production but also for the cycle of life in general.

Plangger Dairy still produces its own "Microflor." A primary substance is started in the dairy and brought to new life with black molasses. The resulting tincture contains a large number of beneficial microorganisms. It can be used in the barn or household and also has the power to rebalance the human gut flora. All life is interconnected, and this fundamental idea is also inherent in this popular Plangger product.

The motif of comprehensive interconnection continues to shape the work at Plangger Dairy to this day: production in harmony with nature is not just food production; it is also a way of life.
