"Anything else?" rings out cheerfully from behind the well-stocked counter. The answer is always "Yes!" because with so many delicacies available in the farm shop at Umingerhof in Niederndorf, one can't help but indulge. Behind the counter, their own cured bacon hangs appetizingly on the wall, alongside traditionally made Kaminwurzen. The counter itself offers a wide selection of different sausages: fine Extrawurst, paprika sausage, ham sausage, Braunschweiger, and even spreadable sausage. All these delicacies are produced directly in Niederndorf – you can't get more regional than that.

A Special Farm and Shop

Sebastian Gasser is the farmer at Umingerhof. As one of six children, he grew up on the farm and has known the farming life since childhood. His parents started the farm shop in the center of Niederndorf, and the range of products has grown over time. The elderly farmer Kunigunde stands behind the counter almost every day, selling their high-quality products, supported by her daughter Maria and daughter-in-law Barbara, who also work in the shop.

Customers of the farm shop in Niederndorf come from near and far to buy the excellent products. Many travel from Bavaria across the border to regularly stock up on the delicacies from the Tyrolean mountains. Others spend their holidays in the Kufsteinerland and take some specialties home with them. Many live in Niederndorf or the surrounding villages: for them, a weekly visit to Uminger has become routine. They know the range inside and out, just as the Gasser family knows their customers. Most are addressed by their first names when they enter the shop, showcasing the warm and personal service.

Bacon from Their Own Production

Sebastian Gasser focuses on producing excellent bacon and sausages. The pigs processed into bacon do not travel long distances. They make only one journey from Upper Austria to Tyrol as piglets, to spend the rest of their lives at Umingerhof. The animals are well cared for and raised humanely. A piglet weighs about thirty kilograms on arrival. Within six months, they gain about 90 kilograms. At 120 kilograms, they reach slaughter weight. The pigs are professionally slaughtered and butchered directly on the farm.

The fresh pork is processed into bacon. The rest is made into sausages – literally. The bacon production process is as follows: the meat is marinated in a special spice mixture. The salt extracts water from the meat. Sebastian Gasser emphasizes that no curing salt is used on his farm, only regular table salt – a true quality feature. The meat stays in the salt for five weeks, then it is ready for smoking. After two days of drying, the meat is smoked over smoldering sawdust. The smoking process takes fourteen days, during which time the magical transformation occurs: the meat becomes the finest bacon.

Customer Loyalty through Quality

In times of food scandals and industrially produced goods, customers greatly appreciate traditionally made products without artificial additives. People want to know where the products they consume come from. "Uminger" in Niederndorf stands for the highest quality and freshness. All products offered in the shop come from selected producers. In addition to their own meat and sausage products, various cheeses from Plangger in Durchholzen, potatoes, fruits, and vegetables from organic farmers in the region are offered. Eggs and homemade jams are also supplied by regional producers to Uminger in Niederndorf. High-proof spirits are, of course, not missing in a farm shop: the schnapps is sourced from the Prinz distillery by Lake Constance and is particularly popular.

Sebastian Gasser has always known he would continue his parents' farm and shop. He enjoys the farming life, likes being his own boss, and values the daily interaction with the animals. For over 100 years, life and work have continued at Umingerhof. The farm, directly on the main road, was one of the first houses built in Niederndorf. The farm is set to continue in the future: "As long as our bacon sells so well and our customers keep coming back, we will keep going. We must be doing something right," jokes Sebastian Gasser. Anyone who has tasted the bacon and sausage from the farm shop in Niederndorf is convinced: Uminger is definitely hitting the mark.
