Various types of sausages are also available: frankfurters and debreziners, white sausages, and much more. Fresh pork and young beef also await buyers. The walls are adorned with bacon, Kaminwurzen, garlic sausages, Landjäger, and pepper bites. It's a paradise for quality-conscious meat and sausage lovers. All these products are made right here at Schererhof in Niederndorf.

Meat from Our Own Production

Just a few steps from the salesroom is the barn, where production begins. Hannes Buchauer is also a farmer and takes care of raising the pigs. The animals are kept in a climate-controlled barn, and fresh air is important for their health. They spend about half a year at Schererhof, reaching their slaughter weight of about 100 kilograms during this time.

Excellent meat quality is the prerequisite for everything else, as Hannes Buchauer knows from his own experience. His animals are allowed to grow slowly, leading to higher quality meat. At the end of their happy pig lives comes the slaughter. The animals don't have to travel long distances because the farmer and butcher have a modern slaughterhouse on his own property.

Slow-Growing Family Business

The development of Schererhof into a direct marketing business began with this slaughterhouse. In the mid-90s, the senior generation of the family was close to giving up the farm due to falling prices making farming unprofitable. The son had a job as a butcher. Despite this, he took the step into self-employment.

He invested in a slaughterhouse and began processing the animals from his own farm. He created cooling facilities and ensured that the entire value chain remained on the farm. This step secured the future of the farm. Not only the animals but also the business was allowed to grow slowly. Hannes Buchauer continued to invest and expanded the business to what it is today.

From Production to Marketing

In the newly built production hall, sausage specialties are made. Schererhof is especially known for its Kaminwurzen made in-house. For this specialty, pork and beef are minced, sausage bacon is added, along with salt and spices. Hannes Buchauer has developed his own blend, giving the sausages their unique flavor. The sausage mixture is filled into natural casings and twisted into pairs. The Kaminwurzen are smoked over beechwood for about three weeks, then air-dried until they are ready to eat.

Until recently, production took place in spacious cellar rooms, and sales were also conducted in the cellar. On good days, customers queued up the entire staircase and out to the parking lot to buy the Buchauer family's popular products. While production is handled by Hannes Buchauer, his wife Verena manages sales. She is in the shop almost every day.

Celebrating Events as They Come

Today, the Buchauer family's business operates at ground level. The newly furnished salesroom is flooded with light, and other food products are offered alongside those from their own farm. Everything needed for the next family celebration can be found here. Those planning a barbecue party would do well to visit Schererhof. In summer, the counter is filled with grill specialties in homemade marinades.

For those who don't want to cook themselves, the Buchauer family offers a party service. This branch of the business has developed over time. It started with sausage and bacon platters prepared by Hannes Buchauer. Then came requests for roast pork, which the butcher gladly fulfilled. Today, the party service offers sour and roast pork, sulz, beef goulash, offal stew, and much more. Meals are delivered with side dishes, salads, and even plates and cutlery – for an effortless evening in the best company.

You can enjoy all Schererhof products with a clear conscience. Hannes Buchauer personally stands for the quality of his products: He makes them with his own hands and vouches for their taste.
